I LOVE to cook!

I do enjoy cooking (and eating). This is a collection of recipes from some parties I've had. The only one I won't eventually put up here is my olde, secret family recipe for Beer Dip.
EAT HEARTY!

Marinated Mushrooms
"Glorious Vegetables in the Microwave."

4 lbs. medium-size fresh mushrooms, wiped clean
1 cup vegetable oil (olive oil works great)
2 cups white wine vinegar
1 tbsp chopped red onion
4 tbsp sugar
4 tbsp salt
1/2 tsp pressed garlic
1/2 tsp freshly ground white pepper
1/2 tsp freshly ground black pepper
1/8 tsp red pepper flakes
1/8 tsp dried oregano

Mix half the mushrooms (2 lbs) and all the rest of the ingredients in a 3-quart casserole. Cook in microwave on high power for 12 to 15 minutes, until liquid simmers, stirring twice. Let cool and marinate on counter for 30 minutes.

Use slotted spoon to remove marinated mushrooms, leaving liquid in casserole. Add second half of mushrooms. Repeat microwaving, cooking and cooling.

Store drained mushrooms covered in refrigerator for several weeks (personally, I don't like them after a week or so - they get gooshy and wrinkly).

Prep time: 30 minutes
Microwave time: 32 minutes
Marinating time: 1 hour
Makes 2 quarts.

Tray's Crab Dip
(Scott's Idea!!!)

2 - 8 oz. pkgs Cream Cheese, softened
1/2 cup Sour Cream
1/2 cup Milk
3 tbsp Mayonaise
2 tbsp Lemon Juice
1 tbsp Worchestershire Sauce
Pinch Garlic Salt
1 1/2 tsp Dry Mustard

1/2 cup grated Cheddar Cheese
1/2 pound Backfin Crab Meat

Paprika
Old Bay Spice

Preheat oven to 350O.
Let cream cheese soften, then combine first 8 ingredients.
Whisk until creamy and smooth.
Stir in 2 tbsp grated cheese.
Fold in Crab meat.
Lightly grease a 1 quart casserole.
Pour in mixture, top with grated cheese.
Sprinkle with paprika and Old Bay.
Bake for 30 minutes.

 

 

 

 
 

Dogteam Dip
(recreated from the Dogteam Tavern in Rutland, VT)

12 ounces Small Curd Cottage Cheese
1 1/2 Tbsp Creamy Horseradish Sauce (or to taste)
1 1/2 Tsp Dry Ground White Pepper
2 slices Bundig Ham, diced

Mix all ingredients.
Chill to allow flavors to mix.
Serve with Ruffles Potato Chips.

Veggie Dip
(Too easy for words!)

1 pkg. Hidden Valley Ranch Dip Mix
16 oz. Sour Cream

Mix according to directions on Ranch Mix package.

HOT variation:
Add approximately 3 shakes Cayenne Pepper, 2 shakes of Garlic, mix well
